톤이 "어떤 감정으로 말하느냐"라면 격식은 "어떤 자리에 맞는 옷을 입느냐"에 가깝습니다. 임원에게 쓰는 메일과 같은 팀 동료에게 쓰는 메일은 용건이 같아도 문장이 달라야 합니다. 문제는 격식이 4단계로 딱 나뉘는 게 아니라 호칭, 인사, 어미, 어휘가 조금씩 섞여 있다는 점이라서 처음엔 기준 잡기가 어렵습니다. 여기서는 "목요일 회의를 오후 3시로 옮기고 싶다"는 같은 안내를 네 단계로 써 보면서 무엇이 달라지는지 눈으로 확인합니다.
격식은 이 네 가지에서 갈립니다
호칭(직함을 붙이는지), 인사(길이와 정중함), 어미(~드립니다, ~합니다, ~해요), 어휘(귀사, 첨부, 상기처럼 문서에 쓰는 말을 쓰는지)입니다. 격식을 높이려면 네 가지를 같이 올려야 하고, 하나만 올리면 어색합니다. 예를 들어 "귀사의 협조를 부탁드리는 바입니다"처럼 어휘는 공문인데 어미는 "~해요"로 끝나면 이상하게 읽힙니다.

무엇이 왜 바뀌었나
"귀사의 무궁한 발전을 기원합니다"는 지웠습니다. 이메일 한 통에는 너무 높은 단계이고, 뒤 문장과 어울리지 않습니다.
"~해서요ㅎㅎ"와 "~괜찮으세요?"를 "~여쭙니다"로 통일했습니다. 한 메일 안에서 격식이 흔들리면 어디에 맞춰야 할지 상대가 헷갈립니다.
"수고하세요" 대신 감사 표현으로 맺었습니다. 업무 메일에서 윗사람에게 "수고하세요"는 피하는 편이 안전합니다.
용건(시간 변경)과 기한(14일), 대안(기존 시간)을 새로 넣었습니다. 격식을 맞추다 보면 가끔 정작 필요한 정보가 비는데, 그걸 채웠습니다.
If tone is "what feeling you speak with," formality is closer to "which outfit fits the occasion." An email to an executive and one to a teammate need different sentences even when the point is the same. The problem is that formality doesn't split neatly into four steps: form of address, greeting, endings, and vocabulary are mixed a little at a time, so it is hard at first to find a standard. Here I write the same notice, "I'd like to move Thursday's meeting to 3 p.m.," at four levels so you can see what changes.
Formality is split along these four things
They are form of address (whether you attach a title), greeting (length and politeness), sentence endings (the polite and casual verb forms), and vocabulary (whether you use document-style words such as "your esteemed company" or "the above"). To raise formality, you must raise all four together; raising just one feels off. For example, a sentence with official-notice vocabulary that ends in a casual verb form reads strangely.

Example 1. Very formal: an executive, an outside agency, a first official contact
Use this when you contact an outside organization or an executive in your company officially for the first time. Titles are used in full in the address, and vocabulary is close to that of a document.

The title is used in full ("To Director Kim ○○"), and the words are a step higher: "I hope this message finds you well," "I regret troubling you," "I would be most grateful." The point and the deadline are just as clear as at other levels. Higher formality must not delay the point.

This is the level you will use most. It is built on a polite base, uses everyday words, and puts in one cushion about the size of "I'm sorry for the inconvenience."

Use this when writing to someone on your team or a colleague you see every week. Keep the greeting short and let the sentence endings be a little softer.

The title is gone and the subject line becomes a question. But the deadline (by Monday) and the fallback (if it's hard, the original time) remain. If you cut information because you are writing casually, you only make more work for each other.

Use this when writing to someone who joined the company with you or a close colleague of many years. It is not a level for someone you are contacting for the first time.

Formality problems come less from going lower than from skipping a step. The email below went to a client contact. It began formally and got more casual as it went on.

What changed and why
"We wish your esteemed company continued prosperity" is gone. It is too high a level for a single email and doesn't match the sentences after it.
"I was thinking maybe... lol" and "Is 3 p.m. okay?" were unified into "I would like to ask whether." If formality wavers within one email, the reader isn't sure what to match.
The "take care!" sign-off became an expression of thanks. Ending a business email with a casual send-off can look light.
The point (changing the time), the deadline (the 14th), and the fallback (the original time) were added. While matching formality, the information you actually need sometimes goes missing, so I filled it in.
